Healthy Chocolate Chip Cookies

I have ALWAYS had a sweet tooth since I was a little girl and my Aunt Sara can vouch for that...lol. Today is a different story...I have seen how sugar affects me and I don't like it.  Crazy cravings that don't stop and then the sugar crash!!!  I really wanted some type of dessert...a good melt in your mouth chocolate chip cookie but I didn't want to ruin all the progress I have made on my abs so I immediately went to pinterest looking for a healthier version and found a this one from Texanerin...they were melt in your mouth AMAZING!!!



Prep Time: 8 min, bake 10 min

Ingredients:

  • 1 can chickpeas, rinse well and pat dry with paper towel
  • 2 teaspoons vanilla extract
  • 1/2 cup + 2 tablespoons natural peanut butter
  • 1/4 cup honey
  • teaspoon baking powder
  • a pinch of salt if peanut butter doesn't have any
  • 1/2 cup chocolate chips 

    Directions:

    1. Preheat oven to 350°F.  

    2. Combine the chickpeas in a food processor and process until very smooth then add remaining ingredients except the chocolate chips and process until combined.  

    3. Add chocolate chips and stir or pulse once or twice.  Mixture will be thick and sticky.

    4. With wet hands, form into 1 1/2" balls. Place onto a cookie sheet covered with foil or parchment paper. They don't do much rising.

    5.  Bake for about 10 minutes. The dough balls will still be very soft when you take them out of the oven. They will not set like normal cookies.

    6.  Store in an airtight container at room temperature (or in the fridge) for up to 1 week. Best eaten warm...heat for 5 seconds if not freshly baked.
