Tonight's dinner...PIZZA!!  I'm almost positive you couldn't have guessed...lol!!  Anyways, I noticed a head of cauliflower in my fridge tonight and since I really hate wasting produce, I did what any frugal female would do...I got cooking in the kitchen!!   This recipe comes together pretty quick and it’s really simple. Ingredients: 1 head of grated cauliflower ½ tsp garlic powder ½ tsp oregano ½ tsp basil 1/3 c freshly grated Parmesan cheese ¼ c mozzarella cheese 1 egg, slightly beaten Directions: ·         Place grated cauliflower in lint free tea cloth and squeeze to drain liquid.  Place grated cauliflower in a heat-safe bowl and microwave for 3-4 minutes.  ·         Place cauliflower in a bowl and fluff with fork.  Add the basil, oregano, garlic, Parmesan, mozzarella and egg stirring to blend. ·      ...

Portabella Mushroom Lasagne

Last weekend I decided to make a small pan of lasagne to surprise my fiance for his birthday.  When I was done, I realized I had mixed together enough ricotta and hamburger for a large pan, so I had to come up with something???  BUT WHAT???  Looking in the fridge, I noticed I hadn't used my portabella mushrooms yet, so I thought...why not???  OH MY GOODNESS!!  The things you can do with Portabella Mushrooms!!!! Zucchini Bake

Couldn’t think of a better side dish to go with a nice medium rare steak and it's from fixate.    Zucchini Bake 1/2 c   grated Parmesan cheese 2 TBSP  freshly grated lemon peel 1/2 tsp dried thyme leaves 1/2 tsp dried oregano leaves 1/2 tsp Himalayan salt 1/2 tsp ground black pepper 2 cloves garlic, finely chopped 4 large zucchini, quartered lengthwise 1 TBSP  olive oil    Preheat oven to 350   Combine cheese, lemon peel, thyme, oregano, salt, pepper, and garlic in a small bowl; mix well.  Set aside. Place zucchini skin side down in large baking dish.  Brush with oil, covering all of zucchini.  Sprinkle evenly with cheese mixture. Bake for 15 to 20 minutes, or until tender. Serve with lemon wedges. Enjoy!!

Country Heat Week 28 DAYS!!

Well it has been just about 30 days since starting this awesome cardio dance program and I thought it was time to check in with y'all!  The program has definitely kicked things up a notch for me...I have been sweating my booty off with the 30 min workouts even with the AC cranked~  I haven't missed a workout in my 28 days except my weekly scheduled off day and I can tell from my clothing that I am leaning out.  I set a goal to keep my hand out of the peanut can each night and let me tell you...it is a huge accomplishment!!  I owe it to getting my meals prepped consistently for these last 3+ weeks, which means dinner is table ready by the time I change out of my office clothes.   I have my Shakeology each and every day...NO MATTER WHAT!!   Wanted to share my results today since I had some extra time to sit down and write this blog post and I am kicking off my "back to school...back to YOU" accountability group tomorrow.   My results may...

Eggplant Turkey Burger

Eggplant parmesan is the norm, but what about using your eggplant for a bun????   Now we are talking!!!  They say a picture is worth a thousand words and this one says it all!!  Yes....this recipe is straight from the fixate cookbook and it tastes AMMMAZZZZZING!!!!!!!!!!    Eggplant Turkey Burger Ingredients: 12 oz raw ground lean  turkey breast 3/4 medium onion        1/4 finely chopped, 1/2 sliced, divided use 2 large egg whites (1/4 c) 1 Tbsp   finely chopped fresh parsley 1 tsp hot pepper sauce 1 medium eggplant, peeled, sliced into 8 rounds 1 medium bell pepper sliced or chopped 1 tsp olive oil 4 slices muenster cheese (4 oz) 1 Tbsp balsamic vinegar Preheat gill or frying pan to high Combine turkey, chopped onion, egg white, parsley and hot sauce in a medium bowl; mix well.  Form into 4 patties. Tequila lime Chicken

One of my favorite dishes is tequila chicken!!  I love the flavor that the tequila gives when it is cooked.  On a nice summer afternoon or evening kabobs are great!  I even enjoy it when I have extra veggies on hand...just perfect served over a nice plate of spaghetti squash with some sun dried tomatoes and peppers and zucchini. The marinade is simple and quick. 1 1/2 lbs Boneless chicken breast Marinade: 3 cloves garlic, minced 1/4 c tequila 2 Tbsp lime juice 1/4-1/2 tsp cayenne pepper 1/4 tsp salt Directions; Whisk marinade ingredients together and pour over chicken and marinate for 1-2 hours.
